The Holiday Drink – The Method

WThis is a home-style version of a cocktail featured on a new drinks list. This is a party-sized pre-mixed that's packed with the flavours of a Christmas time, making it ideal for your festive gathering. Reserve the remaining citrus syrup for brunch beverages, desserts, or to make another batch of the drink.

The Bikini Cocktail

Makes enough for 10 servings

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

For the Citrus Syrup: Put all the ingredients inside a saucepan, bring to a simmer, agitating until the sugar dissolves. After that, turn off the burner and let it to cool fully. Transfer to a sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for around one month.

For the Cocktail Base: Combine the specified liquids in a sizeable container, leave to sit for an hour, then strain preferably using cheesecloth, so it's perfectly clear.

For serving: Measure 85ml of your batch mix into a mixing glass filled with ice, and agitate gently for a minute to chill. Pour to a cold coupe glass or a similar vessel, top with the cranberries adding the final touch with a brief mist of mandarin oil above the glass.
